Halfway Homemade: Valentine’s Day Edition
Valentine’s Day is coming up! Get ready for all the things: delivering cute cards to classroom mailboxes, extra cuddles with your little one … and making some seriously scrumptious & sweet treats together!
To help you get in the spirit, we’ve rounded up three of our favorite festive and tasty recipes – all incorporating MightyMe puffs, of course. Our Peanut Butter Strawberry puffs are perfectly red-tinted for Valentine’s treats, and our Nut Butter Puffs are heart shaped, too, so you have two options for love-themed creations! These are perfect for baking with your mini sweetheart just in time for the holiday (wearing matching mommy + me heart-themed jammies in the kitchen is optional but encouraged 😍).
Fun idea: wrap up treats and deliver to neighbors and friends for a fun outing that will show your LO why it’s important to do nice things that make others feel special and loved!
Strawberry Marshmallow Hearts adapted from our Peanut Puff Krispie Treats
Ingredients
-3 T unsalted butter
-6 cups mini marshmallows
-2 cups dried strawberries
-1 cup Mission MightyMe puffs (Strawberry + Peanut Butter)
Directions
- Melt butter over low heat.
- Add marshmallows, stir until completely melted and remove from heat.
- Fold in MightyMe puffs and dried strawberries.
- Press mixture into a 9x13 pan (we used parchment paper to avoid sticking).
- Cool completely.
- Use heart shaped cookie cutters to cut individual treats
Valentine’s Trail Mix
Ingredients
-1 cup Mission MightyMe Strawberry + Peanut Butter puffs
-1 cup Mission MightyMe Nut Butter puffs
-1 cup dried strawberries
-½ cup strawberry yogurt melts
Directions
- Add ingredients to a bowl and toss!
- Serve in individual clear baggies with a twist tie for a healthy Valentine’s treat
Strawberry Yogurt Covered Pretzels via Stonyfield Organic
Ingredients
-1 bag miniature pretzels
-2 c smooth & creamy strawberry yogurt
-5 c confectioners' sugar
-1 cup Mission MightyMe puffs (Strawberry + Peanut Butter)
Directions
- Preheat oven to 250 degrees.
- In a large mixing bowl, mix the confectioner's sugar into the yogurt one cup at a time with a hand blender.
- Using tongs, chopsticks or tweezers, dip the pretzels (one at a time) into the frosting and place them on the wire cooling rack.
- Place a baking sheet under the wire rack to catch the excess frosting that will drip from the pretzels.
- Once all pretzels are coated, turn your oven off and place the wire rack and baking sheet in, leaving the oven door slightly open. The excess heat will help the frosting dry without leaving the pretzels soggy.
- Allow frosting to harden for 3-4 hours, remove from the oven, and store pretzels in an airtight container for up to 3 days.
Banana Muffin Bites via Simple Mills
Ingredients
-Simple Mills Banana Muffin Mix (or use your favorite mix and adjust recipe accordingly!)
-3 eggs
-½ cup water
-⅓ cup oil
-1 cup Mission MightyMe Nut Butter puffs (heart shaped!)
Directions
- Heat oven to 325 degrees.
- Whisk eggs, water and oil in a large bowl. Add baking mix; whisk until well blended.
- Pour batter into a lightly greased 8x4-inch pan.
- Bake for 15 minutes. Then cover loosely with foil, bake an additional 23-33 minutes or until center of the loaf bounces back when pressed. Cool 10 minutes before removing from the pan.
- Use heart shaped cookie cutters to cut individual treats.
- Top with MightyMe puffs for an extra crunch! (If you prefer, you can also crunch puffs and sprinkle into the mix in step #2, prior to baking).
