No-Bake Energy Bites

New year = new recipes! Our No-Bake Energy Bites are packed with healthy fats, protein and flavor that the whole family will enjoy. Since this is a no-bake recipe, it’s the perfect time to get your little one involved in the kitchen! These on-the-go bites can easily be customized based on your family’s preferences. 
 
Ingredients
-1 cup Mission MightyMe puffs
-2 cups quick oats
-1 cup dried cranberries (we love these as they have no added sugar!)
-1 cup unsweetened coconut shreds 
-3 T. hemp, chia and flax mixture (this can be omitted but we love the addition of protein, fiber and Omega 3 & 6)
-1/3 cup local honey
-3 T. melted coconut oil
-1/2 nut butter (we used sunflower butter)
 
Directions
  1. Mix all dry ingredients together in a bowl
  2. Combine honey, coconut oil and nut butter together in a separate bowl
  3. Once thoroughly combined, pour wet ingredients into the bowl with your dry ingredients
  4. Stir until combined
  5. Use your hands to form small bite-sized balls
  6. Place on a lined cookie sheet and let harden in the refrigerator for 2+ hours
  7. Enjoy!
