No-Bake Energy Bites
Ingredients
-1 cup Mission MightyMe puffs
-2 cups quick oats
-1 cup dried cranberries (we love these as they have no added sugar!)
-1 cup unsweetened coconut shreds
-3 T. hemp, chia and flax mixture (this can be omitted but we love the addition of protein, fiber and Omega 3 & 6)
-1/3 cup local honey
-3 T. melted coconut oil
-1/2 nut butter (we used sunflower butter)
Directions
- Mix all dry ingredients together in a bowl
- Combine honey, coconut oil and nut butter together in a separate bowl
- Once thoroughly combined, pour wet ingredients into the bowl with your dry ingredients
- Stir until combined
- Use your hands to form small bite-sized balls
- Place on a lined cookie sheet and let harden in the refrigerator for 2+ hours
- Enjoy!
