-
1 teaspoon vanilla extract
-
1/2 teaspoon cinnamon
-
Pinch of sea salt
-
2 tablespoons ground flaxseed (optional)
-
2–3 tablespoons mini unsweetened dark chocolate chips (optional)
Toppings
-
1–2 bags Mission MightyMe Nutty Puffs, lightly crushed
-
Extra nut butter for drizzling
-
Freeze-dried strawberries or bananas (optional)
Directions
1. Mash the Bananas
In a medium bowl, mash the bananas until mostly smooth.
2. Mix the Cookie Dough
Add the almond flour, nut butter, vanilla, cinnamon, sea salt, and flaxseed. Stir until a thick, cookie dough-like mixture forms. Fold in chocolate chips if using.
3. Spread the Mixture
Line a small tray, plate, or baking sheet with parchment paper. Spread the mixture into a rectangle about 1/2-inch thick.
4. Add the Toppings
Sprinkle the crushed Nutty Puffs generously over the top and gently press them into the dough. Drizzle with additional nut butter and finish with freeze-dried fruit, if desired.
5. Freeze
Place in the freezer for 2–3 hours, or until completely firm.
6. Break Into Bark
Remove from the freezer and cut or break into rustic bark pieces.
Storage Tips
Store the bark in an airtight container in the freezer for up to 1 month. Let it sit at room temperature for a few minutes before serving for the best texture.
